Ingredients (for 2–3 people)
* You may omit the sugar if you prefer.
Instructions
1. Mix the ingredients
Add the water to a microwave-safe bowl, then stir in the warabi mochi powder and sugar. Whisk thoroughly until no lumps remain.
2. Microwave
Place the mixture in a microwave-safe container, cover with plastic wrap, and heat for about 4 minutes at 600W (approx. 5 minutes at 500W). It is ready when the whole mixture turns translucent and bubbles. (If there are still white patches, microwave for a bit longer until fully translucent.)
3. Stir and cool
Remove from the microwave, stir the mixture until uniform, and then cool it down in water.
4. Cut and serve
Once cooled, cut into bite-sized pieces and serve with kinako sugar and kuromitsu.
Tips
Tips for a beautiful finish
A shallow heat-resistant container is recommended. It helps the mixture heat evenly and reach the ideal thickness.
When cooling in water, it is easier to handle if you place the container directly into a bowl filled with water.
Arrangement ideas
Scoop the mixture with a spoon and drop it into cold water to create round warabi mochi. This looks refreshing and is perfect for entertaining guests.
While the classic pairing is kinako and kuromitsu, it is also delicious with a sprinkle of matcha powder.
"Hon-warabi" Starch vs. Warabi Mochi Powder
There are two types of powders used for warabi mochi: hon-warabi starch and warabi mochi powder.
・Hon-warabi starch is extracted from the roots of the bracken fern; it is rare and used in high-end Japanese confections.
・Warabi mochi powder is made from other starches, offering an affordable way to enjoy that chewy texture.
Maeda’s warabi mochi powder is an original product featuring a unique blend of Hokkaido potato starch and sweet potato starch, making it easy to create authentic warabi mochi at home.
History of Warabi Mochi
Warabi mochi is a traditional Japanese sweet that has been enjoyed since the Heian period. It is characterized by its refreshing texture, derived from bracken root starch, and has long been loved as a hallmark of summer.
In Kyoto, the sound of the bell from "warabi mochi vendors" was a nostalgic sign of summer's arrival. These memories remain etched in the culture and hearts of many.
Today, with the development of warabi mochi powders using starches like sweet potato, it has become easy to enjoy authentic warabi mochi at home. At Maeda, we use our own blend of Hokkaido potato starch and sweet potato starch to achieve that perfect chewiness.
Making warabi mochi is not only a treat but also a fun family activity. Making it in the microwave or coating it in kinako with your children is a great way to enjoy food education.
