We have long dedicated ourselves to traditional confectionery making in Uwajima, Ehime Prefecture. "Hinaokoshi," essential for the Hinamatsuri season, is a traditional flavor passed down through generations in this region.
Maeda's Hinaokoshi is roasted in a rotary direct-fire roaster. Its crunchy texture and rich, fragrant flavor will add a touch of elegance to your Hinamatsuri celebrations.
The Traditional Uwajima "Nigiri-mame" Method
In Uwajima, Ehime, there is a tradition of making Hina-arare as "Nigiri-mame" (pressed beans). It is a unique local method where the arare ingredients and starch syrup are carefully combined and shaped by hand.
By hand-shaping each piece, the gentle sweetness of the starch syrup coats the arare evenly, creating a unique, crunchy texture and a perfect balance of sweetness that spreads in your mouth.
