We have been preserving the traditional craft of making local Japanese sweets in Uwajima City, Ehime Prefecture, for many years. "Hinaokoshi," essential for the Hinamatsuri season, is a taste passed down through generations in this area.
Maeda's Hinaokoshi is roasted in a rotary direct-fire roaster. Its crispy texture and fragrant, rich flavor will make your Hinamatsuri celebrations even more vibrant.
Uwajima's Traditional "Nigirimame" Technique
In Uwajima City, Ehime, there is a tradition of making Hina-arare known as "Nigirimame" (hand-pressed beans). This unique regional method involves carefully mixing arare ingredients with starch syrup and hand-shaping them.
By hand-shaping each piece, the gentle sweetness of the starch syrup spreads throughout the arare, creating a unique crispy texture and a balanced sweetness that unfolds in your mouth.
