Maeda's Shiratamako
Since our founding in 1924, we have dedicated more than a century to rice and grains. We began selling rice flour in 1973, and this shiratamako reflects the care and expertise we have developed over more than half a century.
Made from a blend of Japanese and Thai glutinous rice, our shiratamako is known for its pleasantly chewy texture and smooth mouthfeel. It is an essential ingredient for a variety of Japanese sweets, including strawberry daifuku, shiratama dumplings, and fruit punch.
What Is Shiratamako? How Does It Differ from Mochiko?
Shiratamako is made using a traditional method: glutinous rice is washed, wet-milled, and rinsed with water, then the settled starch is dried. It has finer particles than mochiko, another type of glutinous rice flour.
This water-based process creates a springy, chewy texture with a smooth mouthfeel. Delicious even when chilled, shiratamako can be used to make a variety of Japanese sweets, including fruit punch with shiratama dumplings, shiratama dango, and strawberry daifuku.
How to Make Basic Shiratama Dumplings
Ingredients
| Shiratamako (glutinous rice flour) | 85g |
| Water | Approx. 70ml |
Instructions
- Gradually add approximately 70ml of water to 85g of shiratamako and knead until the dough is soft and pliable, about the firmness of an earlobe. Roll into balls of your preferred size.
- Place the dumplings in boiling water. Once they float to the surface, cook for another 1–2 minutes, then transfer to cold water.
- Once chilled in cold water, your shiratama dumplings are ready. Serve with fruit, sweet bean paste, or syrup as desired.
Tip: For best results, add the water a little at a time as you knead.
