Dorayaki

Barley Flour "Dorayaki"
Exquisite dorayaki made with barley pancake mix!
The flavor of the barley pairs perfectly with the red bean paste.
Ingredients (makes about 6)
| Domestic Barley Pancake Mix | 100g |
| Egg | 1 |
| Honey | 1 tbsp |
| Mirin | 1 tbsp |
| Sugar | 1/2 tbsp |
| Milk | 70cc |
| Red Bean Paste (Tube-style) | As desired |
Instructions
・In a bowl, combine the egg, honey, and mirin, and mix well with a whisk. Add the milk and pancake mix, and stir until combined.
・Heat a frying pan over medium heat. Once hot, turn the heat to low and lightly grease with oil. Place the pan on a damp cloth to cool it down slightly.
If using an electric griddle, preheat it to 140°C. (No oil needed.)
・Pour the batter in one go from a height. (Use about half a ladle for smaller dorayaki.)
・When bubbles start to form on the surface (about 1 to 1.5 minutes), flip it over and cook for another minute, then remove from the pan.
・Sandwich the red bean paste between two pancakes to finish.
