Buckwheat galettes (makes approx. 8)

| Buckwheat flour | 100g |
| Egg | 1 |
| Salt | A pinch |
| Honey | 1/2 tsp |
| Water | 100ml |
| Sparkling water or water | 150ml |
| Toppings of your choice | Sliced ham, pizza cheese, egg, etc. |
1. Mix the egg and water in a bowl.
2. Mix the buckwheat flour and salt in a separate bowl. Gradually add the egg-water mixture and honey while whisking well, then thin with sparkling water.
Let it rest in the refrigerator for about 1 hour.
3. Lightly oil a heated frying pan and pour the batter in to cover the bottom thinly.
Once the edges are dry, add egg, ham, and cheese, fold in the four sides, cover, and steam-cook for about 3 minutes.
Letting the batter rest overnight allows the flavors to meld and makes it even more delicious.
Cooking over a well-heated pan ensures a beautiful finish.
You can also enjoy it as a dessert by topping the baked crust with butter, honey, and fruit.
