Like rice, barley comes in both non-glutinous and glutinous varieties.
Mochi mugi is a glutinous barley that has a sticky quality, offering a chewy, popping texture.
Additionally, among barley varieties, mochi mugi tends to have a higher content of β-glucan, which is a type of soluble dietary fiber.
Contract-grown with mochi mugi farmers!
Maeda's mochi mugi products are manufactured entirely in-house, from pearling and milling to retort processing. Because we carefully pearl our barley using our own unique technology, we achieve a product with an excellent appearance and a mild flavor.
